Sweet Potato Salad

Hello Again,

Boy, do I love sweet potatoes. I started eating them when I learned of their nutritional value a couple of years ago. Since then, I’ve been hooked. I can eat them everyday. There are so many ways to enjoy them. Roasted, baked, mashed and more.

Here is another Beauty Detox Recipe from the lovely Kimberly Snyder. I took her recipe and added my own twist. Here’s her recipe


2 large or 3 smaller sweet potatoes


1/4 cup Dijon mustard


2/3 cup ripe avocado


1 minced garlic clove


1/3 cup diced celery (or cucumber, if you’ve run out of celery, like me today!)


2 Tbs. minced purple onion


2 Tbs. nutritional yeast


2 tsp. olive oil


High quality sea salt, to taste


Freshly ground black pepper, to taste


Now here’s my version:

I used both sweet potatoes and a couple of red ones I had leftover.


My husband said he wanted to make guacamole which inspired me to use the guacamole as my base instead of using Dijon mustard and avocado. I wish I got a picture. My husband has become a guacamole master 🙂

Instead of steaming the potatoes, I decided to roast them. Once they were done roasting, I mixed them with guacamole and my sweet potato salad was born.


So here’s the ingredients I used:

5 sweet and 3 red potatoes


4 avocados

1/4 red onion

1/2 tomato

salt and pepper to taste

I roasted potatoes for 45 min at 400 degrees. Once cooled, I mixed them with the guacamole. My picture isn’t quite as pretty as Kimberly’s but it was tasty.
