I hope you had a nice weekend. Mine was eventful. On Saturday, my dog Rusty got out of our yard to chase the mail carrier. This is the second time he’s done this. But this time, he wasn’t so lucky. The mail lady pepper sprayed him! My poor little dog. We immediately got him in the tub and flushed his eyes with water.He could barely open them. 😦 My husband and I gave him a good bath while we were at it. He needed one anyway. 🙂
He survived! Thankfully. All clean.
Sunday was a calmer day. And somewhat productive. I finally finished putting up my patio curtains.
The curtains are actually drop cloths I bought at Lowes. More on this project later.
Now, for the good stuff. Food!
Today I’m sharing some delicious brown rice wraps. Yum. Yum. Yum.
I was inspired to make these from this recipe here.
This is spring roll recipe that calls for brown rice paper, which I did not have. So it inspired me to make my own creation using brown rice tortillas.
These brown rice tortillas are a staple in my house. I make burritos, pizzas and sandwiches out of these. Love them. I usually stock up and freeze them. They are harder than regular tortillas and crack easily but they soften when you stick them in the microwave for 10-15 seconds covered with a paper towel or wax paper. Anyway, they’re much healthier than regular flour tortillas.
Here we go:
A good meal would not be complete without my favorite food, sweet potatoes. Black beans are ok too 🙂
Another favorite. Avocados. They make almost everything taste better.

Here are the ingredients:
1 brown rice tortilla (trader joes is my favorite)
1/2 an avocado diced
1/4-1/2 a tomato diced
Large spoonful of Roasted sweet potatoes
Spoonful of Black Beans
Next time I’ll add some lettuce or other greens. I forgot this time around.
These were very simple to make because I had all ingredients on hand and I used some leftovers.
