How was your weekend? If you’re in Southern California, you know we are having some super hot weather. It’s 100 degrees today. I’m trying to stay cool and hydrated. I’ve been eating a lot of watermelon this weekend. It’s refreshing and hydrating. My kids and I can eat a whole watermelon in a day. This week’s Beauty Detox Recipe Assignment is Warm Kale and Mushroom Beauty Salad. This may come as a surprise to you but I’m not a huge fan of Kale. I have tried it many different ways. In salad, in smoothies and kale chips. I realize its high nutritional value and I eat it sometimes; but I prefer spinach. I do however, love mushrooms! So I’m making my own version of this recipe using spinach instead of Kale. This recipe is super simple and quick. It takes only ten minutes. Almost every dish I make is simple. I love to eat healthy but I don’t like spending hours in the kitchen. I buy my organic spinach in bulk at Costco. It’s only $4. I use it for smoothies and salads. 1. Heat pan with 1tbs of Olive Oil. The original recipe called for coconut oil and although I enjoy it, my family doesn’t like the taste. 2. Add onion 3. Add Mushroom, Tamari and Apple Cider Vinegar 4. Add Spinach and cook lightly (until soft)
5. Serve with some avocado slices and enjoy!
- 1 large bunch of spinach
- 1/2 avocado
- 1/4 onion
- Sea salt & pepper (just a pinch)
- 8 ounces of Baby Bella mushrooms
- 1- 2 tsp. Olive Oil
- 1/2 Tbs. raw apple cider vinegar
- 1 1/2 Tbs. tamari
I changed a few of the ingredients based off what I had available in my kitchen. I would have loved to use some lemon juice in it but my husband used the last lemon this morning. That’s what I get for introducing him to the morning lemon water routine 🙂
