Brown Rice and Lentil Soup

How is your new year going so far? Are you off to a healthy start? I’m not sure how many people actually start their “healthy diets” on New Years day being that it’s still a holiday and some celebrating still going on. Today felt a lot like Christmas for me as we spent the day at my in laws with lots of food and desserts. Yes, I indulged in some dessert.

Are you as cold as I am right now? All I want is hot tea and soup these days so I’m sharing a Lentil and Brown Rice Soup Recipe to keep you warm too. Its one of my go to recipes during the week. Its healthy, simple and tastes good.

All the ingredients you need are pictured here. I usually buy my brown rice and lentils in bulk at Sprouts. Its a lot cheaper than buying pre-packaged.IMG_7851

Once I wash and chop up the onion, carrots and celery, I throw in a pan and sauté with about 1tbs of olive oil

Note: the brown rice and lentils absorb a lot of the water so if you’re wanting more of a liquid soup, add more water

Here’s a picture of it for leftovers the next day. I think it might even taste better the day after.

Ingredients:

1 Tbs of olive oil

1 organic onion

4 organic celery stalks

4 organic carrots

1 cup of brown rice

1 cup of Lentils

1 container of organic vegetable broth plus 2-3 cups of water (total of 6-8 cups of liquid)

Instructions:

1.Chop up onion, carrots and celery and place into pan with 1tbs of Olive Oil simmering for 5 minutes or until softened.

2. Add in vegetable broth plus 2-3 cups of water

3. Bring to boil, cover with lid and cook on low for 1 hour

It takes less than 15 minutes to prep which makes it a perfect dish on busy days.
