Peanut butter balls

Happy Saturday! I hope you are enjoying your weekend. It is such a beautiful day here in California. We’re about to hit the trail soon and soak up that sun.

I have a yummy recipe for you today. Are you ready for some peanut butter balls? I kind of have fun saying that 🙂

If you don’t know by now I have a thing for peanut butter. Ever since I was a kid I’ve been obsessed with peanut butter. For a while I was hooked on Larabars in peanut butter cookie flavor. My family also likes them but at $5 a box, they can get expensive when everyone is eating them constantly so I’ve been in search of homemade snacks that are similar in taste but less expensive.

These are a yummy healthy snack to have when you’re hungry and need something quick. What’s even better is that they are gluten-free and vegan! And the best part is they are simple and inexpensive to make. Love it!

Well, here you have it.

Here are the four ingredients

I like to keep it gluten-free so I was very happy to find these oats at Target recently for only 5.99

My peanut butter also comes from Target. Its only $4 something for this large size. I really love Target! (please ignore the fact that I haven’t stirred it yet. Natural peanut butter oil separates and needs to be stirred.)

I buy my dates in bulk at Costco because it saves so much $

I also buy my maple syrup at Costco for around $12. You can’t beat that price!

First I mix the oats, then add in the peanut butter, dates and maple syrup

Next form into balls

And that’s it! So simple right?

Ingredients:

1 cup of gluten free oats

3/4 cup of natural peanut butter (or almond butter if you prefer)

3/4 cup of dates

1/8 cup of maple syrup

Instructions:

Mix all ingredients together in a food processor (I used my Ninja)

Form into balls. (I pressed them into balls rather than rolling because they tend to fall apart when you roll)

Store in a bag or container in your fridge and grab whenever you need a snack

I made a double batch of these earlier this week and they were a hit. I finished the last one this morning. Time to get back in the kitchen.
