Any good plans for the weekend? I have a lot of DIY ahead of me over the next couple weekends. We are having a sweet 16 bonfire for my daughter in two weeks so I’m busy getting the plans together. I’ve been living on Pinterest every day gathering tons of ideas. Don’t you love Pinterest?
Speaking of love, who doesn’t love pizza? No matter how healthy or unhealthy, I think we can all agree that pizza is one of the best splurges ever.
I started making homemade pizzas a couple years ago when we were trying to move away from gluten and processed foods. I tried different gluten free crusts but found them too expensive so I decided to try a brown rice tortilla as the crust. Best idea ever!
Even though I went gluten free and vegetarian, I was still making the pizza with regular cheese so last weekend I decided to use Daiya vegan cheese. It was on sale at sprouts so I grabbed a couple bags.
I have tried other vegan cheese only to be grossed out. This one is better. It takes a little while to adjust to when transitioning from dairy cheese but its good when you get used to it.
I also bought a bag of their Jack flavor cheese and it was quite good. I made enchiladas with it last Friday and they were good! I’ll be sure to post that recipe later.
I used bell pepper and mushrooms as my toppings.
My family had their pizza with regular cheese and turkey pepperoni. They are not ready for all vegan just yet but I’m working on it 🙂
Their pizza looks pretty good.
But so does mine 🙂
They are ready in only 10 minutes
Pretty simple right?
1 jar of pizza sauce (I like trader joes)
1 pack of brown rice tortillas (trader joes are best)
1 bag of Daiya mozzarella cheese
Bell pepper and mushrooms or any toppings you like. Next time I will use olives. I ran out.
Preheat oven to 400 degrees
Place brown rice tortilla on non-stick pizza pan, spread sauce, layer cheese and toppings and stick in the oven for 10 minutes.
That was almost too easy right?
