Happy 4th of July!
I hope you are enjoying this day of freedom we are so blessed to have. Summer is my favorite time of year for so many reasons. For starters, the warm weather. Last night was so perfect, we had a little bonfire in our recently improved and still improving backyard. You should have seen it before. That’s a whole other story.
Our little fire was nice but I came inside smelling like barbequed hair. Lol. Its amazing how fast long hair absorbs the smoke. But it was worth it, I love spending time with my family outside.
In honor of this beautiful day I was inspired to make a red, white and blue dish. I love colorful food. Don’t you?
Look at the color. I have been searching Pinterest for a quinoa fruit salad and got some ideas but nothing was exactly what I wanted so I put this together.
Its quinoa with blueberries and raspberries for color and apples and pecans for crunch. I like my salads to have a crunch.
It was so easy to make. If you’ve read my other posts, you might know I like food to be as easy as possible. Long recipes are not my cup of tea.
For flavor I added some balsamic vinaigrette dressing from Trader Joes. I saw some recipes that used homemade dressings but again, I didn’t feel like going through the trouble.
I used a Fuji apple and cut into cubes
And pecans for added crunch and healthy fat 🙂
Mixed everything together with a tablespoon of dressing
Here are the list of Ingredients again
1 cup of Cooked Qunioa
1 package of Raspberries
1 package of Blueberries
1/2 Fuji apple
A pinch of Pecans (or more if you desire)
1-2 Tbs. of Balsamic vinaigrette dressing (or make your own if you feel like it)
Mix it all together in a bowl and enjoy!
