Hello and Happy Friday
Where have I been? Oh you know, running around with my kids and enjoying the sun every chance I get. I can’t believe this is the last week of their summer vacation. My sister came to visit us a couple of weeks ago (from Washington) and during her visit we went to my favorite place on earth, the beach. I don’t need fancy vacations. Give me the beach and I’m happy. 🙂
I am so thankful to have many beaches around us to choose from. This time, we went to Huntington Beach and had breakfast a cute little place called the Sugar Shack. We first tried it back in November and my kids loved it so I promised them we would come in the summer again when my sister visits.
After stuffing ourselves full of pancakes and coffee, we relaxed on the beach for a couple of hours.

The next day we had a church picnic to attend so I opted for something healthy to offset the load of pancakes from the day before. So of course I made a quinoa dish but this time I made it would apples, raisins and pecans. Can it get any simpler? Or tastier? I know I make a lot of quinoa dishes but this has to be one of my favorite for the simple fact of convenience. Aside from the twenty minutes it takes to cook quinoa, I whipped this up in 10 minutes. It was delish.
During the picnic, it started raining. Rain in July? I guess so. My aunt came over that evening and it poured the whole time she was here. It was very odd but no complaints because we desperately needed it. California has been in a serious drought so we are doing what we can to conserve water these days. Hopefully the El Nino predictions are correct.
So here’s my simple quinoa recipe (one of many)
1 cup of cooked quinoa
1 Fuji apple (chopped)
1/4 cup of raisins (or cranberries)
1/2 cups of pecans
1-2 Tbs. of honey or maple syrup for added sweetness (optional)
Mix all ingredients together and enjoy!
