Penne Pasta Salad

Have you heard of Banza? Pasta made from chickpeas?

Just a couple of months I ago I was walking around IDEA world fitness convention looking for a snack because I was so hungry in between sessions so I stopped by the Banza booth and was given a little sample of pasta and it did not disappoint. My instant reaction was this is made of garbanzo beans? But it tastes so yummy. I have nothing against garbanzo beans, I just didn’t expect it to taste so good. I’m a big fan of beans, I do love my hummus. And because I’m a vegetarian, beans are a staple in my diet.

I really appreciate how much protein and fiber they contain compared to regular pasta. I actually don’t use regular pasta anymore for that reason.

I decided to make a pasta salad with it the last time my husband barbecued and it came out quite yummy. He even liked it. I admit, he was not for gluten free pasta at first but now he’s a fan. 🙂

Ingredients:

1 box of Banza chickpea pasta

1 green or red bell pepper ( I used whatever I had)

1/2 cup of red onion

1/2 cup fresh tomato

1 can of olives

1 Tsp of garlic

Salt & pepper to taste

1/3 cup of oil

1/3 cup of balsamic vinegar

8oz of cheese of choice ( I used parmesan cheese)

*I try to keep cheese to a minimum but when I do, I either use organic or vegan when possible.

Instructions:

Cook pasta according to instructions on box

Once cooled, mix all ingredients together. It’s that simple.
