Eat more salad 

Hello there, How is your Monday going so far? It was cold and cloudy this morning which made me want to do nothing but stay inside and be lazy but we all know that’s not an option so I forced myself to get my butt in the garage and work out. It was barbell squats, split squats and step ups for me today.  Then off to work. I work at a chiropractic office on Mondays and lucky for me that means a chiropractic adjustment every week 🙂 When I got home for lunch I had a serious sweet tooth and was craving something along the lines of a Reese’s peanut butter cup so I opened my fridge and remembered I had leftover salad, sweet potatoes and brown rice from yesterday so I put together this pretty little salad. Vegan Pizza

Hey! Happy Friday!

Any good plans for the weekend? I have a lot of DIY ahead of me over the next couple weekends. We are having a sweet 16 bonfire for my daughter in two weeks so I’m busy getting the plans together. I’ve been living on Pinterest every day gathering tons of ideas. Don’t you love Pinterest?

Vegan Taco Salad


Happy Tuesday! How was your weekend? Mine was great because on Saturday, my husband and I returned the trail after a year. (Read more about it in previous post) On Sunday, we visited our friends and while our husbands spent hours doing car stuff, my friend Aubrey and I made Taco salad. Since I no longer eat meat, I made a vegan version for myself by skipping the taco meat and cheese. It turned out quite good. Continue reading

Gluten-free pizza


I’m dropping in real quick to share a gluten-free pizza recipe I made this weekend. I have been making this healthier version for a while. My family loves pizza. Who doesn’t?

For the crust, I use a brown rice tortilla. Spread on the pizza sauce, add cheese and toppings. It’s so simple and my family actually likes it 🙂

Although I share mostly vegan recipes here, this one is not but you can always make it vegan with non-dairy cheese like Daiya or make your own. I’ve tried vegan cheeses on pizza but my family refuses to eat it 😦

Here are the ingredient I used:

Here’s the super easy recipe:

1. Spread pizza sauce on brown rice tortilla

2. Spread cheese

3. Add whatever toppings you like

4. Bake at 400 degrees 10 minutes

I hope you had a nice weekend. Mine was eventful. On Saturday, my dog Rusty got out of our yard to chase the mail carrier. This is the second time he’s done this. But this time, he wasn’t so lucky. The mail lady pepper sprayed him! My poor little dog. We immediately got him in the tub and flushed his eyes with water.He could barely open them. 😦 My husband and I gave him a good bath while we were at it. He needed one anyway. 🙂
